I love cooking and making up new recipes is almost a daily occurance in my kitchen. (I get bored very easily and can never eat the same thing two days running.) One of my most recent concoctions is my take on a classic comfort dish, so I thought I'd share...Shephard's Pie
You need:
500g beef mince
1 onion, chopped
1 carrot, peeled and chopped
1/2 red capsicum, chopped
1/2 cup minted peas
2 tsp minced garlic
1/2 tsp minced chilli
2 tbs tomato paste
1 cup chicken stock (approx)
1 cup red wine (approx)
splash worcestershire sauce
mixed Italian herbs
salt and pepper to taste
4 medium potatoes
milk and butter for mash
1 tbs dijon mustard
1/2 cup grated cheese
What to do:
Fry onion in a little olive oil, with garlic and chilli, until translucent. Add vegetables and mince and cook until mince is browned. Add tomato paste and stir through. Add chicken stock and wine, continue to stir occassionaly until thick. Season to taste.
Meanwhile, boil potatoes until soft. Drain water and mash potatoes with butter, milk and dijon mustard. Season to taste.
Spoon mince mixture into a baking dish and top with mashed potato. Bake in a moderate oven until potato starts to brown. Top with cheese and bake until melted. Allow to stand for a few minutes before serving.
YUM! I know what I'm cooking for dinner tonight!
